From food service to digitalization: how Coreca structured its growth with Captivea and Odoo

When Coreca reached out to Captivea, the company was in the midst of rapid expansion: several locations, fast growth, and a cooperative organization that needed to be structured. But to grow without losing its local and human roots, Coreca needed more than just ERP software. They needed an agile partner, capable of adapting to their ambitions and their pace. Captivea stepped up with a pragmatic and flexible approach.

By deploying Odoo, the goal was clear: lay the right foundations, keep up with the pace, and build a system that supports those ambitions without slowing them down.  To understand this transformation, we spoke with Arsène Didelot, who holds three key roles at Coreca: partner, project manager, and head of system research and integration.

Coreca: more than just an SME, a local mission

Coreca is a human-centered journey aiming to create warm community spaces, deeply rooted in its region, where connection and sharing truly matter. With several locations — the restaurant Beim Struwwel, Café Tëntert, the Beim Struwwel grocery store in Tuntange, Épicerie am Duerf with a small eatery in Schrondweiler, and soon a grocery store in Heffingen — Coreca is developing a cooperative model based on collective involvement in decision-making.

Coreca's ambition goes far beyond food service: it's about building social connections in villages, supporting local producers, and giving their teams the freedom to act locally. These spaces are designed as vibrant hubs where eating healthy, local, and seasonal food becomes a responsible act that serves the community.

In rapid expansion, this Luxembourg-based SME is working to structure its activities to support its growth in a controlled way, while staying true to its human values and local roots.

CLEAR GAINS AFTER INTEGRATION: MORE CLARITY, RESPONSIVENESS, AND COORDINATION

Before Odoo, Coreca relied on a basic system limited to the cash register and a few accounting reports. While in the midst of structuring, the team lacked the time and resources to fully use their features or explore other options. The transition to Odoo, guided by Captivea, marked a turning point.

From the very first weeks, improvements were clear: simplified quote creation, more flexible product management, easier tracking of revenue…The point of sale module was one of the first milestones, quickly extended to other entities with a well-established multi-company logic.

"The point of sale management now offers many possibilities. We can view reservations, manage the cash register system, track sales and revenue, as well as optimize product management."   - Arsène Didelot, Project Manager

Automating certain processes – like sending orders or managing inventory – helped reduce manual workload and improve coordination across the different branches. Thanks to dashboards and real-time reports, Coreca now has a clear view of its activities, strengthening its ability to make quick, informed decisions.

Captivea is now supporting Coreca’s growth at its own pace by laying the foundations for more strategic and coordinated management:

"We now have a tool to manage our activities; we just need to learn how to use it properly. There are still many resources and opportunities to explore and optimize." - Arsène Didelot, Project Manager

The choice of Odoo...and especially Captivea

Why Odoo? A modular and accessible solution

Coreca needed a solution that could centralize the management of its various activities while staying flexible enough to adapt to the specific needs of each location. Odoo quickly stood out as the right choice, offering exactly that combination: a modular, scalable, and accessible system that could support their growth without unnecessarily complicating their operations.

Beyond its technical strengths, Coreca relied on a trusted recommendation from a positive experience in a related sector. This recommendation helped avoid a lengthy evaluation phase and gave them solid confidence in Odoo’s reliability and adaptability to support their development.

Arsène Didelot, Project Manager at Coreca, shares

"We didn’t have much time to compare solutions. The recommendation came from a trusted person, which allowed me to proceed calmly. It helped me move forward quickly, without wasting time in endless evaluation phases."

How Captivea entered the picture: recommendation, meeting, human connection

Choosing Captivea is above all a story of personal trust. Coreca was convinced by the team’s flexibility and responsiveness, especially by Maxime Grieshaber, CEO of Captivea Luxembourg. At first, there was some skepticism, but the sincerity and professionalism displayed quickly dispelled those doubts.

As Arsène Didelot says so well:

"What really convinced me was his flexibility, and especially the way Maxime Grieshaber, CEO of Captivea Luxembourg, works. At first, I was a bit skeptical; it almost seemed too good to be true. But his authenticity quickly reassured me, and I loved working with him, carried by his dynamic energy."

Agile support, at the company’s pace

The need for a flexible, scalable project, managed under urgent conditions

At Coreca, the need was clear: to centralize the management of several entities – restaurant, café, grocery store – without wasting time. The project started under constraints, without traditional planning or a formal requirements document. The priority: replace an old limited system and quickly lay the foundation for a more suitable tool.

"The needs were defined quite roughly. We refined them during our video calls, discussing possible solutions directly. We bypassed classic steps – like writing the requirements document or structuring databases. In reality, we moved forward very pragmatically, almost improvising."  - Arsène Didelot, Project Manager at Coreca

The chosen approach was deliberately pragmatic. No “turnkey” solution, but an hourly package model, moving forward step by step, based on available time and on-the-ground priorities. The first objective was deploying the Point of Sale (POS) module, essential for payments, product management, printing, and reservations.

"We had to adapt quickly. Instead of going with a standard implementation package, I chose — after a discussion with Maxime — to go with an hourly package system," confirms Arsène Didelot

A close collaboration, built in a spirit of co-construction

Over the weeks, the collaboration with Captivea developed through dialogue and adaptability. With a dedicated consultant who was attentive and responsive, adjustments were made along the way based on feedback and real needs. Together, they gradually structured the different parts of the project: multi-location management, module configuration, website creation, online reservations, integration of marketing tools...

"With Captivea’s representative, Florian Allegre — someone very flexible — we built the project as we went. We focused on the essentials, laid the groundwork, and defined the timeline along the way." - Arsène Didelot, Project Manager at Coreca

End-to-end support, from deployment to operations

The project is driven by a close collaboration with Florian Allegre, project manager and consultant at Captivea. Attentive and adaptable, he works alongside the Coreca team to lay the foundation for a solid system: multi-site management, module configuration, website creation, marketing tool integration...

But Captivea went even further. The team also handled the physical installation of equipment: registers, scales, Zebra printers...A real added value, rarely handled by integrators

"It’s a rather unique project because it pushed us out of our comfort zone. We implemented everything from A to Z: the Odoo ERP, of course, but also all the hardware — registers, printers, scales…A comprehensive approach that allowed us to deliver a complete and operational environment." — Florian Allegre, Project Manager and Consultant at Captivea
"Coreca reached out to us to deploy a full Odoo environment, with a focus on the POS. With that foundation, we were able to manage the points of sale, structure product and service catalogs, automate printing (receipts, labels, documents), and integrate online reservation management to streamline customer flow in the restaurants."  — Maxime Grieshaber, CEO of Captivea Luxembourg

When agility meets efficiency: the winning Coreca-Captivea partnership

Captivea made Coreca’s transformation possible — step by step, in a spirit of partnership, with a real understanding of daily challenges. By focusing on listening, agility, and closeness, Captivea didn’t just deploy a tool — they supported Coreca in its growth, at its own pace, laying the foundation for controlled and sustainable development. Behind this success lies a method: a partnership built on these same values, turning operational challenges into concrete drivers of efficiency.

And that closeness? It’s a real everyday asset. Arsène Didelot shares an example:

"There are always emergencies. But when it happens, I pick up the phone, call Maxime Grieshaber, and right away, he connects me with the right person. One time, a misconfiguration blocked the register on the shop’s opening day. It was fixed in less than thirty minutes. That kind of responsiveness is what keeps us moving, even when things get stuck."

A big thank you to Coreca and Arsène Didelot for their trust and collaboration throughout this project.

Their commitment and vision were key to making this transformation a success. Coreca proves that digitalization is much more than a tool — it’s a real growth driver.

Implementing an ERP system: phased rollout or big bang approach?
Rolling out an ERP system is about more than just replacing software — it’s a complete transformation of how a company operates, collaborates, and grows. At the heart of this transformation lies a key strategic decision: should everything be switched over at once, or rolled out in stages? In other words, is a “big bang” deployment better than a phased approach? It’s not just a question of method — it’s a choice that can make or break your ERP implementation, both from a technical and a human perspective. In this article, we break down both approaches, explore their real-world implications, and help you identify the right path for your business.
